Here are some helpful tips straight from the masters at Hobe Meats:
RIBEYE STEAK
No need to overthink this one! Youve got the best steak in the country. Just season it up & place it on a hot grill, four minutes on each side to sear in the juices. Turn heat down to a medium temperature and cook four to six minutes on each side. Keep in mind that you can always throw it back on the grill if it needs more cooking but you cannot reverse an over-cooked steak! So err on the side of rare and sear that steer over high heat!!
BEEF HANGER STEAK
Hanger steak is a thick strip of meat that hangs between the rib and the loin (hence the name hanger steak). Like a skirt steak, it is full of flavor and best served medium rare. Marinate the meat for four to six hours before cooking. Place meat on a hot grill and cook for four to six minutes on each side. Remove from the grill and let stand for five minutes, then slice thin and serve.
BEEF TRI-TIPS
The beef tri-tip is perfect for many uses. Grill it up low 'n' slow, serve it as-is or cut it up for steaks, fajitas, tacos, or anything that calls for a flavorful, tender meat. Lightly season the tri-tip and place it on a hot grill and sear three minutes on each side. Turn the heat down to a medium temperature and cook for 40 minutes total, turning the tri-tip over every 10 minutes. Serve medium rare.
